The creation of Seitan Novae: a meaningful partnership with our local producers
At Novae, we are deeply committed to responsible catering, with a focus on local, sustainable ingredients.
With this in mind, we co-developed Seitan Novae—an innovative and delicious plant-based alternative—in partnership with Renski Seitan and Ferme Pré-Martin.
Renski Seitan: where passion meets purpose
Renski Seitan is the brainchild of Renske, an entrepreneur driven by a passion for sustainable food. Her mission was to create an organic seitan rich in protein, kind to the environment, and supportive to animal welfare. Her original recipe was made using imported lentils, and already met high standards for quality and sustainability.
In our drive to further reduce the environmental impact of our supply chains, our procurement team encouraged Renske to explore a locally sourced alternative to imported lentils. This led us to connect her with one of our trusted partner farms: Ferme Pré-Martin in Longirod (VD).
Ferme Pré-Martin: championing local and organic agriculture
Ferme Pré-Martin is a family-run farm dedicated to organic mixed farming on its lands in Longirod and Morges. Committed to short supply chains, the farm sells all its produce locally. Among its diverse crops is a standout legume: the organic fava bean—a protein-rich seed ideally suited for making seitan.
With the support of our Executive Chefs, Renske rose to the challenge of reformulating her recipe by replacing imported lentils with Swiss-grown fava beans.
The result? A seitan that’s just as flavourful as ever—but now even more local, made using only seven carefully selected ingredients.
From this synergy between artisanal expertise, local production, and commitment to good food, Seitan Novae was born: a wholesome, responsible product deeply rooted in Swiss terroir.
