{"id":4188,"date":"2024-10-03T13:52:42","date_gmt":"2024-10-03T11:52:42","guid":{"rendered":"https:\/\/novae.ch\/?post_type=news&#038;p=4188"},"modified":"2024-10-03T13:52:45","modified_gmt":"2024-10-03T11:52:45","slug":"a-table-competition-2","status":"publish","type":"news","link":"https:\/\/novae.ch\/en\/actualite\/a-table-competition-2\/","title":{"rendered":"\u201c\u00c0 table!\u201d competition"},"content":{"rendered":"\n<p class=\"has-large-font-size\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#e40477\" class=\"has-inline-color\">Two Novae restaurants are taking part<\/mark><\/p>\n\n\n\n<div style=\"height:100px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>This year, we are delighted to be participating in the \u201c<a href=\"https:\/\/evenements.geneve.ch\/atable\/\" target=\"_blank\" rel=\"noreferrer noopener\">\u00c0 Table<\/a>!\u201d competition again, an event dedicated to promoting sustainable food and organised by the City of Geneva and its partners.<\/p>\n\n\n\n<p>Running from&nbsp;<strong>23 September to 20 October 2024<\/strong>, \u201c\u00c0 Table\u201d showcases restaurants that take eco-friendly and health-friendly approaches, in line with the objectives in the Cantonal Climate Plan and Geneva Climate Strategy.<\/p>\n\n\n\n<div style=\"height:100px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Sustainable food: a lever for a greener tomorrow<\/h2>\n\n\n\n<p>We firmly believe that food plays a fundamental role in reducing our environmental impact, and we launched our \u201c<a href=\"https:\/\/novae.ch\/actualite\/l-alimentation-durable-chez-novae\/\" target=\"_blank\" rel=\"noreferrer noopener\">Sustainable Food<\/a>\u201d activities for schools as far back as 2021 to raise awareness of this critical issue among young people. In October 2022, we broke new ground by releasing our&nbsp;<a href=\"https:\/\/novae.ch\/actualite\/label-eco-toque\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Eco Toque<\/strong><\/a>label, an ambitious programme aimed at fostering a more sustainable offering and supporting consumers as they transition to more responsible eating habits.<\/p>\n\n\n\n<p>It therefore makes perfect sense that we are taking part in the \u201c\u00c0 Table!\u201d competition.&nbsp; We hope this initiative will raise awareness among the public, while highlighting practices that support short supply chains, promote local agriculture and reduce our carbon footprint.<\/p>\n\n\n\n<div style=\"height:33px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>This year, two of our restaurants are taking part in the competition.<\/p>\n\n\n\n<p>The event is another opportunity for us to demonstrate our commitment to sustainability. Throughout the four weeks of the competition, we have decided to structure our activity and communications around four major themes: <strong>reducing food<\/strong><strong> waste (zero waste<\/strong>)<strong>, using local products, highlighting seasonal products, and promoting vegetarian dishes.<\/strong><\/p>\n\n\n\n<div style=\"height:100px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Our sustainability levers at the heart of the \u201c\u00c0 Table!\u201d competition<\/h2>\n\n\n\n<p>Throughout the competition, we will highlight these four essential themes through tangible actions and exclusive recipes in our restaurants.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">1. Zero waste<\/h3>\n\n\n\n<p>Did you know that 25% of the environmental impact of food in Switzerland is down to food waste? In Switzerland, this&nbsp;<a href=\"https:\/\/novae.ch\/actualite\/novae-gaspillage-alimentaire-en-suisse\/\" target=\"_blank\" rel=\"noreferrer noopener\">waste<\/a>&nbsp;represents 2.8 million tonnes of food per year, or 330 kg per person!<\/p>\n\n\n\n<p>At Novae, we are taking steps to bring this figure down:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>We regularly weigh our food waste to identify areas for improvement.<\/li>\n\n\n\n<li>We make use of leftovers in other dishes.<\/li>\n\n\n\n<li>We adapt our services to avoid waste, especially on weekends.<\/li>\n\n\n\n<li>We sell any remaining dishes to take away at 50% off through our \u201cNoGaspi\u201d concept.<\/li>\n<\/ul>\n\n\n\n<p><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-cyan-bluish-gray-color\"><em>Tip:<\/em>&nbsp;Discover practical food storage tips on the <a href=\"https:\/\/www.savefood.ch\/\">savefood.ch&nbsp;<\/a>website to reduce waste at&nbsp;home.<\/mark><\/p>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">2. Shop local<\/h3>\n\n\n\n<p>Minimising the distances food travels is key to reducing our environmental footprint. In Switzerland, 50% of food is imported.<\/p>\n\n\n\n<p>In our restaurants, we choose to support local producers:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/novae.ch\/nos-partenaires\/\">We work<\/a><a href=\"https:\/\/novae.ch\/nos-partenaires\/\" target=\"_blank\" rel=\"noreferrer noopener\">&nbsp;directly with farming families, without any middlemen<\/a>.<\/li>\n\n\n\n<li>Our fresh products, such as meat, fruits and vegetables, and dairy products, mainly come from Switzerland. We favour producers located within a 70 km radius of our restaurants.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:31px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">3. Choose seasonal fruits and vegetables<\/h3>\n\n\n\n<p>Eating out-of-season fruits and vegetables leads to a greater environmental impact, due to the need to heat greenhouses and the long transportation distances.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>For the products we use, we respect the rhythm of Europe\u2019s seasons, including when it comes to fruits like kiwi and&nbsp;<a href=\"https:\/\/novae.ch\/actualite\/pas-davocat-ni-de-mangue-dans-vos-assiettes-cet-ete\/\" target=\"_blank\" rel=\"noreferrer noopener\">avocado<\/a>.<\/li>\n\n\n\n<li>Our kitchen teams are trained to make the most of winter vegetables so they can serve up&nbsp;<a href=\"https:\/\/novae.ch\/actualite\/les-produits-de-saison-locaux-et-fait-maison\/\" target=\"_blank\" rel=\"noreferrer noopener\">tasty dishes all year round<\/a>.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:32px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">4. Pick the vegetarian option<\/h3>\n\n\n\n<p>On average, a vegetarian dish has three times less impact on the climate than meat-based (WWF Switzerland). The production of feed for livestock uses up farmland and generates greenhouse gas emissions. What\u2019s more, livestock ruminants emit methane.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In our restaurants, we offer&nbsp;<a href=\"https:\/\/novae.ch\/actualite\/les-proteines-vegetales\/\" target=\"_blank\" rel=\"noreferrer noopener\">tasty, balanced vegetarian options<\/a> as a matter of course.<\/li>\n\n\n\n<li>We select high-quality meat exclusively from Switzerland or France.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:100px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Let\u2019s get our consumers involved in the \u201c\u00c0 Table!\u201d competition<\/h2>\n\n\n\n<div class=\"wp-block-media-text is-stacked-on-mobile\" style=\"grid-template-columns:17% auto\"><figure class=\"wp-block-media-text__media\"><img decoding=\"async\" width=\"192\" height=\"218\" src=\"https:\/\/novae.ch\/wp-content\/uploads\/2024\/09\/image-panier-a-table..png\" alt=\"\" class=\"wp-image-4173 size-full\"\/><\/figure><div class=\"wp-block-media-text__content\">\n<p>Each week, one of the four themes above will take centre stage.
